Here's an easy method for making simple, convenient, low-to-no mess handheld tortilla "pouches" with very few resources. I like it because I'm lazy. Here are the advantages:
- No oil needed in the pan to brown the tortilla.
- If you don't let the fillings touch the pan either and carefully keep them all on the tortilla, your frying pan doesn't need to be cleaned at all.
- If you are careful folding and eating it, you won't make a mess (so don't over-fill this pouch).
What's needed:
- You just need one or two tortilla shells, such as the cheap 10-packs from Superstore that sometimes go on sale for $5 for two packs.
- And you need some fillings. I used cheap marble cheese and some cherry sauce but you can put pretty much whatever you like.
- Be careful not to get all excited and overfill, or it will definitely spill and ooze out, and probably scald you because it'll retain heat very well.
- Notice I left the center empty as a reservoir space (slide 2). This gives the fillings room to move around, especially when you fold it and bite into it.
- To "cook" it, you can use a large frying pan or griddle, enough for the tortilla shell to sit comfortably.
- Arrange the fillings, then put another tortilla shell on (optional, actually).
- Once one side has crisped up to how you like it, flip it over and brown the other shell/other side.
- If you want to use wetter ingredients that might make it hard to flip, you can first crisp one shell, then put in another one and the toppings, then put that first shell on top. This way, you won't have to flip it at all, just carefully fold it.
- Once both sides are browned (and the fillings heated through), simply remove the tortilla and fold it into half, then half again.
- This makes a convenient to hold burger-sized pouch with the opening pointed up so things don't start leaking out right away.
- Once folded you probably want to let it cool a bit before you start grabbing it as it can still be hot, and any liquids inside (e.g., melted cheese) will be superhot,.
If you haven't overfilled it with ingredients, biting into it shouldn't cause the fillings to be pushed out or through the shell at the creases.
